This has been the case since we began in West Hollywood in 1993, and it remains so to this day. Years have passed, but our enthusiasm for what we do remains.
All of the ingredients we use in our kitchens are personally selected for each dish by Francisco and myself, with the assistance of our chefs. And fantastic ingredients demand even better preparation! We have a team of preparation cooks who begin their day many hours before our doors open to the public. All they do is that. Prepare great ingredients so that they can be used in all of the great Bossa Nova dishes.
